Keto Cranberry Orange Bread

Ingredients

  • 5 eggs
  • 1 egg yolk
  • 2 tbsp sour cream
  • 9 tbsp coconut flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped fresh cranberries
  • 3 tbsp Lakanto Monkfruit powdered
  • 9 tbsp butter, melted
  • 2/3 cup Lakanto Monkfruit Powdered
  • 1 1/2 tsp orange extract
  • 1 tsp vanilla
    For the Glaze:
  • 1/2 tbsp butter, melted
  • 2 tbsp Lakanto Monkfruit powdered
  • splash of heavy whipping cream

Instructions

  • Preheat oven to 350 degrees.
  • Beat eggs, egg yolk, butter, Lakanto Monkfruit powdered, butter, sour cream, orange extract, and vanilla extract on medium-high until thoroughly combined.
  • Add coconut flour, baking powder, and salt and beat again.
  • In a small bowl, combine 3 tablespoons Lakanto Monkfruit powdered, with the chopped fresh cranberries, and stir until cranberries are coated.
